This is probably better for gameplay discussion. And the answer is why not? And for fun.

doesn't it just double in range?

Have you seen the PZ boosts to other weapons? All weapons get more range, firepower and efficiency. A PZ bertha fires 6 bullets for the price of one. Everything is better on a PZ.
A nullifier only gets extra range, but it turned out to be extremely useful in some cases.

It could be nice , if it's possible to set what units you can put into PZ.

Anything is possible with custom CRPL.

Without CRPL you can only exclude units that are bigger than 3x3 by placing void near the PZ. So without CRPL you can only exclude the bertha, forge and CN.
It would be helpful if you gave us some background information on why you want to know something, helps to answer your questions better. In this case, just say that you don't want PZ nullifiers to nullify other nearby enemy structures.

IIRC I made a map where reactors would get destroyed if they were built on powerzones.

Does a forge on a PZ do anything?

Nope.  Nor do Ore Mines benefit.
