Well, the mod doesn't have options. If you can find or write an SMF mod with options, post it here.
The mod that I believe Virgil installed is this mod: http://custom.simplemachines.org/mods/index.php?mod=1690. This mod unfortunately only offers a "best style" for the table.

I had a look at the referenced post.
I see this as the issue that you may not like, but it seems to be simply that you used table cells with lines to delineate the table, which the new style does automatically. This can be fixed by deleting two table rows in that post. I tested it and it looks fine, IMHO, after that.

On the other hand, the majority of the tables look rather nice, much improved with outlines. But that may be a preference.

If you are able to change the bbcode and add new ones as you wish then it is possible to make a table code like [table=blank]table stuff[/table] where it would make a table with class="blank" and the blank class would be
table.blank {
border:0px;
}

So you could use BB code to trigger wether or not theirs is borders or even the size?
In this case that depends on the mod installed to support this feature. As far as I understood it can't be parametrized.
I think TP was working on a mod. Hopefully he'll get that made (atleast for you, I don't really care)
